Orange Pecan Cake

This is the favourite cake in our house at the moment. We love it as it is very easy to make, healthy and great for breakfast or as a snack. Orange and pecans create a perfect fit for this cake. Taste is best described as very yummy :).

Orange Pecan cake is ridiculously easy to make. You just need to put all ingredients together in a bowl, mix until combined and then bake. It is very soft and light, great for a snack. We eat it often for breakfast in combination with green detox juice.

Ingredients

  • 2 cups of whole wheat flour
  • ⅔ cup of coconut blossom sugar
  • 2 tsp of baking powder
  • 1 pinch of salt
  • ½ cup of melted coconut oil
  • 1 cup of fresh squeezed orange juice
  • 3 Tbsp of orange zest
  • 1/2 cup of ground pecans
  • 1 egg (for vegans without egg)
  • 1/4 cups of oat milk

Method

Put flour, sugar, baking powder, salt and grounded pecans in a bowl. Mix it all until well combined.
Add coconut oil, juice, egg (for vegans without egg) and oat milk to it and mix it together.
Mix the oil and juice with the dry ingredients only the necessary to mix both parts and pour it into the molds.
Cover a baking sheet with greaseproof paper and pour the mixture into it.
Turn on the oven 180°C and bake the cake for about 45 minutes.
